Our winery, Unión Vinícola del Este, was born in 2007 with a firm commitment to quality. That is why we use the latest technologies to make our cavas, looking at all times, the maximum respect for the grape.
In recent years, Uve's investments have been aimed at increasing capacity and greater energy efficiency thanks to the adaptation of all our processes to become a 100% ecological winery.
Our cavas have long been recognized and awarded in the main competitions and tastings at the international and national level.
Requena is located in the highlands of Valencia that gives entrance to the Meseta. It is a region with a very long tradition in winemaking. There are vestiges that date back more than 2.000 years to the time of the Iberians. It has a continental climate with long, cold winters and hot summers, although the proximity to the Mediterranean Sea means that the temperatures are not as extreme as in the interior of the Plateau.
Being the Macabeo grape the most used in our blends, in Uve we use the Chardonnay variety in a higher percentage than what is usual in the DO Cava. This strain has adapted in an amazing way to the climatic conditions and soils of the Requena region. It contributes to our cavas acidity and structure with citric touches.
Since the founding of our winery, we have bet on the internalization of our cavas and the consolidation of the national market, betting in this area on quality cava. Currently 75% of our Cavas production is destined for international markets, from Europe to the most remote lands of Oceania passing through consolidated markets such as America and Asia. In Spain we sell 25% of our cavas, being a demanding market and faithful to our wines.
At UVE we have more than 100 winegrowers with whom we have been working closely each year and since the foundation of the winery.
